Ok people…it took some work but I’ve got this one down. The first one I did in a crock pot and it was not good. Read: mushy and well…mushy! So after some finessing this didn’t take long (2o minutes) and was super tasty. Hubs actually said “where’d you find this recipe?” I told him I made it up after the mushy mess last time, his response “No f’in way! This is amazing!” You could double, triple, quadruple if you wanted this depending how many people you are feeding.
2 apples (I used 1 red delicious and 1 granny smith because I like to mix it up)
1/4 cup honey
3/4 cup almond flour
1/2 cup sliced almonds
1.5 tbs coconut oil
1 tsp salt
1/8 cup honey
1/4 cup dark chocolate chips (optional)
Separated can of coconut milk
3 tbs honey
1 tbs cinnamon
First dice up your apples into chunks and throw them into a frying pan
Then put in the honey, cinnamon, and nutmeg (spices to taste I like a lot of cinnamon). and sauté it up till the apples are soft and there is a syrup made from the honey (about 10 minutes). Make sure you stir them around so you don’t get half cooked apples.
While the apples are cooking whip up the topping. Take the almond flour, almond slices, and coconut oil and mix together. I threw it in the microwave to make the coconut oil melt down. Then add cinnamon and honey. Mix it together so its like a wet paste. Then I threw in about 1/4 cup dark chocolate chips because chocolate makes everything better.
Then pour the apple mixture into a pan and cover with the topping. Throw it in the oven on broil for like 5 minutes (watch it because it will burn fast!).
While that is cooking (and you are watching it…I am serious it will burn quick!) make your whipped cream. You’ll need to put the can of coconut milk in the fridge the night before. Then open it and drain the water so you just have the cream. Throw it in a bowl with honey and cinnamon. Get out your electic mixer and mix till it gets whipped creamy. Mine didn’t quite make stiff peaks but may have if I wasn’t hungry and whipped it for longer.
