Quick Stuffed Chicken

I haven’t posted any new recipes lately — my bad!  This has become one of my favorites.  Really you can stuff the chicken with anything you want.  This particular time I used spinach and roasted red peppers.  You can also use bacon, ham, any sliced veggies.  Get creative.  Mix it up!  Feeling greek?  Use some diced egg plant and olives!  Get crazy and let me know what you come up with!

What you need:
– 3-4 chicken breasts (based on how many people you are feeding and how much they eat)
– Stuffing ingredients (again anything you like) — this one I used a handful of spinach and roasted red peppers (canned in olive oil because ain’t nobody got time for roasting their own peppers
– salt
– pepper
– garlic powder
– onion powder

Butterfly your chicken and be careful not to cut all the way through.  Then stuff those bad boys with whatever tickles your fancy.  Close em up and stick a tooth pick in them to hold it shut (I use mini spears so I don’t forget about toothpicks and eat one…I am spastic like that).  Then sprinkle the top of each breast with some salt, pepper, garlic powder, and onion powder.


Cook at 350 for about 45 minutes.  Cut your chicken open to make sure it cooked through.  They roast up all good and tasty.  I am also a fan of this  leftover so make extra and have it for lunch the next day!


Thats it!  10 minutes of prep and a tasty meal.  Also a great way to hid veggies for those who aren’t big fans.   I made this with some sweet potato fries.  Just chop them up, coat in some olive oil, salt, onion powder, garlic powder, salt, and crushed red pepper.  Cook in the oven at 400 for 45 minutes flipping once.  (Secret: preheat the pan in the oven…I don’t know why but it works so much better)!
